This tasty and nutritious Paleo chicken stir-fry recipe was motivated by Danielle’s experience with Against All Grain. This flavorful stir-fry, which is loaded with vibrant vegetables and soft chicken breast, is enhanced by the addition of coconut aminos, ginger, and garlic. It’s the ideal dish for a simple weeknight supper.
Ingredients: 2 tbsp coconut aminos. 1 tbsp sesame oil. 1 tsp grated fresh ginger. 2 cloves garlic, minced. 1 lb chicken breast, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. ½ cup sliced mushrooms. 2 green onions, sliced. 2 tbsp coconut oil. Salt and pepper to taste.
Instructions: In a small bowl, mix coconut aminos, sesame oil, ginger, and garlic. Marinate sliced chicken in the mixture for 15-20 minutes. In a large skillet, heat coconut oil over medium-high heat. Add marinated chicken and cook until browned, about 5-6 minutes. Add broccoli, bell peppers, mushrooms, and green onions to the skillet. Cook, stirring frequently, until vegetables are tender-crisp, about 5-6 minutes. Season with salt and pepper to taste. Serve hot and enjoy!
