Creamy Tomato Tortellini Soup is a quick and easy comfort dish that everyone will love. The combination of rich tomato flavor, tender tortellini, and creamy broth makes this soup satisfying and delicious.
Ingredients: 1 tbsp olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 can 28 oz crushed tomatoes. 4 cups vegetable broth. 1 cup heavy cream. 1 tsp dried basil. ½ tsp dried oregano. ½ tsp salt. ¼ tsp black pepper. 1 package 9 oz refrigerated cheese tortellini. Fresh basil leaves, for garnish optional. Grated Parmesan cheese, for serving optional.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for another 1-2 minutes, until fragrant. Stir in crushed tomatoes, vegetable broth, heavy cream, dried basil, dried oregano, salt, and black pepper. Bring to a simmer. Add cheese tortellini and cook according to package instructions, usually about 7-9 minutes. Once tortellini is cooked, taste and adjust seasoning if needed. Serve hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
